These delicious pancakes are a quick healthy substitute to regular pancakes!
1 cup unsweetened almond milk
1 large ripe banana
1 tsp. pure vanilla extract
1 tsp. baking powder
1/2 tsp. ground cinnamon
1 dash sea salt
2 cups old fashioned rolled oats
1/2 tsp. extra virgin coconut oil
3 cups mixed berries
1. Place almond milk, eggs, banana, vanilla extract, baking powder, cinnamon, salt, and oats in a blender and cover. Blend until smooth
3. Pour 1/4 cup batter onto the skillet; cook for 2-3 minutes or until bubbles form around the edges of the pancakes. Flip with spatula; cook for an additional 90 seconds.
5. Serve with 1/2 cup of fresh berries
Serving size is 2 pancakes with 1/2 cup berries. Should make about 8 pancakes
My first two pancakes kind of fell apart because I didn’t wait long enough to flip them. Oops! So I’d definitely wait until they bubble!
